My Homemade Ginger Syrup

Every early summer and fall, I look forward to making my homemade ginger syrup. This year, I bought 1kg of ginger and made a fresh batch as well.

I use the syrup mainly for making my homemade ginger ale and ginger pound cake. My husband sometimes uses it for his original cocktails. I think once you make it, you can use the syrup for variety things, so I'd love to introduce how to make it today.

Preparation:

Take off the seeds from the cardamon pods.

Chop the top off the clove with a knife and crush them into some rough powder.

Ingredients:

1kg ginger

1kg brown sugar

1 lemon

Whole clove (to taste)

Whole cardamon pods(to taste)

3 cinnamon sticks

chili pepper (to taste, optional)

Introductions:

Slice the ginger roughly.

Place them into an enamel pan and add the sugar.

Let the sugar melt around for 30 minutes.

Heat the mixture gently until the sugar fully melts and the ginger softens.(see the referenced photos)

Add some seeds of cardamon, the rough powder of clove, three cinnamon sticks and simmer.

Option: if you like tingling feelings, add some chili pepper.

Add some lemon juice. When you add it, the syrup turns a little bit pinky.

Strain the syrup using a sheet of cloth. Don't throw away the strains lees. You can use these for baking. They become wonderful ingredients for ginger pound cake.

After straining, store the syrup in a clean jar and keep it in a refrigerator.

Serving Suggestion:

I made homemade ginger ale by mixing the syrup and carbonated water. If you have some mint leaves, float them on the top. It looks lovely! Homemade ginger ale is definitely delicious! Enjoy!!
