Bitter taste - what do we need it for? When we taste something unpleasant in our mouth, we usually spit it out. Where does this reflex come from? What do we need it for? It turns out that some cells in our tongue that are sensitive to bitter taste (There are many such cells at the root of the tongue, in the deepest part of mouth cavity), react to so called plant alkaloids. Bitter taste is caused by plant toxins - molecules that plants created in the course of evolution in order to protect themselves against herbivores. These are essentially poisons of varying severity.
Plants protect themselves with the help of toxins against herbivores. Herbivores need to distinguish toxins in order not to get poisoned. That is why bitter taste receptors have appeared (humans have 43 types of them) that react to the appearance of toxins. They accordingly stop chewing, swallowing and make us spit out food, if it has unpleasant taste.
Of course, a little bit of bitter taste makes a dish taste better and more interesting. For example, many love coffee without sugar and bitter tonic. However, nobody will stand too much of bitter taste. It will be a severe blow to the center of negative emotions. If you want to test it, you can take a aloe leaf and chew it for five seconds. I swear, you will remember this experience for your whole life, because such a bitter taste impresses and is remembered afterwards.
I might say that we also profit from bitter experiences in life. There is an expression that a bad experience leaves a bitter taste in our mouths. The memory should help us avoid such things in the future.
@Bennatan That is an interesting idea! Thank you for the comment!
