My Invention In The Kitchen

When I was in Safaga a few days ago, I made an orange cake. I made it without following a specific recipe or even looking up for one beforehand.

I forgot to write down how much of each ingredient I added at that time. Hopefully, writing about it now will help me recall the forgotten information.

First of all, I was preparing to make a banana cake a la Yumi, but I was missing cardamom. I found there were three oranges so I changed my mind and decided to use them to make an orange cake instead.

I peeled the oranges, separated the segments, blended them with a hand blender, then I sieved them. I got around 200 ml of orange juice, plus some flesh. I guess the flesh ranged between 200-250 g.

I thought to myself why not add the flesh to the recipe? If it didn't have healthy benefits, at least I would be reducing the waste.

After that, I started to add the pre-prepared ingredients that I was supposed to use to make a banana cake. I mixed butter and sugar with a hand mixer. When it turned into a smoothie, fluffy mix, I added flour, baking powder, and the orange flesh. I poured orange juice bit by bit until the dough was neither too firm nor too spready/ fluid. It took 100 ml of orange juice; this is the only quantity I am sure of.

I poured the dough into small cake cups and put them in the oven.

After more or less 40 minutes, the orange cake was fully baked. Then I made the orange syrup. I added a tablespoon of sugar to the other 100 ml of orange juice and heated it slowly until it got thicker.

When the cake cooled down, I topped it with the orange syrup. It was delicious and filling. And the orange syrup literally was the icing on the cake.
