Cardamon Banana Bread

Do you like spices? I'm a huge fan of them and use them a lot in my cooking. I believe that spices make food taste much better. Each spice has its own unique properties and can have health benefits.

Today, I'd like to share one of my favorite spiced baking recipes with you. Banana bread isn't popular in Japan, but I learned how to bake it in the States. One of my American friends from Alabama taught it to me, so every time I bake it, I think of her. I've been calling it "Dixie's Banana bread".

For today's recipe, I use cardamon as the main spice.

Preparation:

Butter at room temperature

Egg at room temperature

Chopped cardamon (Pictures below)

Mashed banana (see below)

When you mash banana, use a fork. Let's avoid over-mashing.

Instructions:

At first, using a hand mixer, mix the butter and brown sugar.

Add the chopped cardamon in the mixture and mix until well incorporated.

Once the mixture turns pale and fluffy, add the eggs one at a time, mixing well after each addition. .

Add all purpose flour, baking powder and baking soda in the mixture, then gently mix everything with a spatula until smooth.

Add half of the mashed banana and mix until combined.

Add salt and keep mixing.

Add the left half mashed banana and mix until the mixture looks creamy.

Baking:

Pour the dough into a cake mold (⌀15cm or 18cm) and place a halved banana on top as decoration.

Bake it at 170℃ (338°F) for 50 to 60 minutes.

I always use a ⌀15cm cake mold because it gives the bread a beautiful shape.

I like classic banana bread, but I prefer this spiced version with cardamom. I hope this recipe brings you joy! Happy baking!

100g unsalted butter

110g brown sugar

3g salt

5g cardamon

2 eggs

200g all purpose flour

3g baking powder

1g baking soda

200g banana for mashing

1 banana for topping
