Today, I'd love to introduce doubanjiang, a fermented chili bean paste. Doubanjiang is a type of miso from China, which has several benefits.

Yesterday, I wrote about how I bought some fresh fava beans at the farmer's market. I used them to make homemade dauganjiang. Since I took step by step photos, I'd love to share the process with you.
First, shell the beans and boil them.
Then, grind them using a food-processor.
Next, add chili pepper, miso, salt, and kōji (fermented rice) and mix all together.
Put the mixture into a clean jar.
Since dauganjiang is a type of miso, it'll need at least six months to develop its flavor. I've placed two jars in a cool spot and let them ferment for half a year.
I'm not a big fan of very spicy food, but I'd love to use this homemade fermented seasoning in various cooking. I believe that our bodies are shaped by what we eat and how we live. Stay healthy, everyone!

The only ways how I used to have fava beans was to eat it raw or boiled. And I liked none of that. So I'd love to try different recipes to have it. My only concern about your recipe is the six-month period to have it fermented. It gets very hot here so I'm not sure it'd go well. And yeah, we don't have fermented rice! :DDD

I know it's hard for you to get the fermented rice. It's also hard for you to find substitution. I wish you could make it.
I might look into inventing a new recipe for fava beans! :)) I will keep you posted if I ever manage to have one!
