Ginger Syrup Inspired by Yumi's Recipe

Although I didn't have all the ingredients, I couldn't wait to try the ginger syrup that Yumi posted in one of her latest posts.

First of all, I used around 88 grams of ginger instead of a kilo. Honey replaced the brown sugar which I wasn't sure was a good alternative because at some point, I felt the honey got burnt, or maybe it was cinnamon or cloves. I added cinnamon powder, we didn't have cinnamon sticks, and crushed cloves during the last two minutes when the ginger and honey were on fire. After half an hour, there was no liquid in the pan, just a sticky mix of ginger, spices and honey!

I added some sparkling water to the mix and sieved it. I kept the lees in the freezer until Yumi posts the ginger pound cake.

I liked the syrup's taste which reminded me of a kind of carbonated ginger drink I had in Sri Lanka.
