Today, I'd like to share my favorite muffin recipe: Banana Chocolate Muffins
I really like to bake them because they've never failed to be delicious. The banana keeps them nice and juicy for days -- if they survive that long 😉
Ingredients
- 150 g butter (it works best if you take the butter out of the fridge a few hours before you start)
- 2 eggs
- 150 g sugar
- 1 sachet of vanilla sugar
- 1 pinch of salt
- 200 g flour
- 1 sachet of baking soda
- 150 g chocolate drops (100 g whole milk chocolate + 50 g dark chocolate)
- 3 bananas (the riper the better)
- optional: up to 250 ml of milk
Preparation
In a large bowl, cream the butter, eggs, sugar, vanilla sugar, and salt in a stand mixer. While that's going on, peel the bananas and mash them with a fork on a plate. Add the flour to an extra measuring cup and mix in the chocolate drops and the baking soda. Then add the mashed banana, alternating with the flour mixture, to the butter-egg-sugar mix. Add milk if needed.
Spoon the batter into the muffin tray. Alternatively, use two spoons. That way you can use one spoon to get the dough out of the bowl and the second to scoop it off the first one. Make sure to fill each cup no more than 2/3 of the way (up).
Bake
Preheat the oven to 180°C (convection mode). Then bake for 20 minutes.
When done, remove the muffins from the oven and allow to cool down before removing them from the tin. Enjoy!
