  • Cuir bhordspúnóg ime, doirt bainne nó uachtar, salann agus piobair isteach.
  • Más maith leat, mionghearr an t-oiniún agus an ghairleog, sótáil siad, agus cuir sa bhrúitín iad.

Boxty (Poor House Bread)

I recently tried this recipe and fell in love with the traditional Irish potato recipe. If you like latkes or potato pancakes, chances are you’ll enjoy it.

Cooking Time: 45 minutes

Servings: 8

Ingredients:

4 medium boiled potatoes

Couple drops of cream or milk

1 cup flour

Optional Ingredients:

Half a ton

1 clove of garlic

Cheese you like, 8 small cubes (I used Munster)

Sour cream or Greek yogurt

Directions:

Bring the potatoes, peel them, and mash the potatoes.

Add a tablespoon of butter, the drops of milk or cream, salt and peppers.

If you add these, chop the onion and garlic, sauté them, and mash them.

Add flour to the mixture, 1/4 cup at a time.

Knead until you have a dry-ish dough (without sticking to your hands too much) - flour works out to be about about a quarter cup per potato.

Shape the dough into a flattened disc and cut into eight parts.

If you like, add a slice of cheese in each part. ( I cut one side of each piece and insert the cheese. and close it up)

Roll each piece gently into a ball

Flatten the balls somewhat and brown them in the frying pan with the other tablespoon of butter.

Serve warm.

I like to eat them with sour cream or Greek yogurt.
