I know that look. You're dying for something sweet. We're making a cake today, for a change. How about a lemon cake? You won't even have to turn on the oven and just need a few ingredients and a hand mixer. The recipe is so forgiving you won't even have to write it down.
Not sold on it yet? Come on, don’t fuss over such a simple decision. It'll be a piece of cake, literally, and you'll get to lick the bowl.
Good call. Wash your hands and let's get to it.
Open the fridge and grab three lemons, half a liter of whipping cream, and some condensed milk. We'll also need any kind of cookies except round ones. They're a pain to fit into rectangular containers. Now whip the cream, and be careful not to splash it —this kitchen looks straight out of a magazine.
(Five minutes later)
I'd stop there. If you overdo it/overwhip it, you'll end up with butter instead. Now squeeze the lemons, add the juice, and give it a quick whip . Not too much —just enough to mix it up. See what the lemon does? Yeah, it thickens the cream. Now fold in the condensed milk. How much? To taste.
Next, pour some milk into a dish, dip the cookies one by one, and make/build the first layer. And here comes the fun part. Ever done masonry? Those twists and turns you have to do with your wrist remind me of it. If not, don't sweat it. Just alternate layers of cream and cookies, and you’re done. If you want to put some lemon zest on top, now's the time.
Put the cake in the fridge for at least a couple of hours, and you can dig in. Hope I got your favorite right. It's a sugar bomb, sure, but what the heck, you only live once.
