Yuzu (A Kind of Japanese Citrus)

This morning, when I was watering my plants in my garden, I found four yuzu fruit had been growing in the plant. I was so excited because I'd never seen it bloom for five years. I even didn't notice that it bloomed this year either.

Yuzu (a kind of Japanese citrus) is one of my favorite citrus fruits, and I'd wanted to use my homegrown ones in my cooking ever since I planted it. It's an essencial ingredient in Japanese cooking. It adds wonderful aroma and makes the dishes' taste more delirious. Even though mine produced only four, this absolutely made my day! I couldn't help jumping around!

I'd love to make yuzukosho (citrus chili paste), which is a fermented paste made from chili peppers, yuzu peel, and salt. It goes very well with hot pot dishes.
