The Green Curry

Do you like curry? I like making various different kinds of curry, and today I'd like to share my homemade Thai green curry.

Although spicy food really isn't my thing, I always enjoy this green curry.

First, I sliced some vegetables such as onions, carrots, okras, and eggplants.

Then, I chopped some chicken.

I placed all the vegetables and chicken into a pot and added two fresh bay leaves from my garden.

Coconut milk is essential for green curry.

I simmered those ingredients until they became soft.

While the curry was simmering, I cooked some rice. I prefer using jasmine rice over sticky Japanese rice for green curry.

I also prepared some French fries in an air flyer.

At the end, I added some green curry paste.

I also added some nam pla and sugar. I like a more complex flavor, so I always add these.

Green curry is very easy to make, but it's absolutely delicious!
