Russians' favorite soups are borscht and shchi. Borscht is made with beets; so it's red in color, while shchi is made with cabbage. They both contain beef. Sometimes shchi has an acid flovour. I like them both. We also make chicken soup, meatball soup and others. They're reallly delicous too, especially when my father makes them. Unfortunately, my wife can't make soup like my father.
We like to eat okroshka, a cold summer soup, in the summer. It can be made with kvass, a beverage that tastes like beer, or with kefir. You cut up cucumbers, boiled eggs, green onions, and sausage and put them into kvass or kefir and mix it all together. Then you put it in the fridge, and you eat it cold because it's a summer soup. Okroshka made with kvass has a brown color, and okroshka made with kefir is white. I like them both, too.
