Since the pandemic began, I tried to spend less time in grocery and also less frequent to be there.
I started to pile up the foods, and looked for alternative or combination of foods.
I used to cook from fresh ingredients before, so I learned to cook more dried and use preserved foods because our freezer has a limited space.
These kind of dried and preserved foods are well known in subtropical area because they experience the winter and some of them have to deal with the freezing winter. Let's say about kimchi, sauerkraut, dried radish, dried black beans, any kind of pickles, dried lily bulb, pork sung/floss, ham, etc.
One of our favorite and comfort food is porridge. It made from rice, and very easy to cook. Just added some salt, chicken powder, and white pepper. Served it with dried radish, fried shallot, some soy sauce, chili oil, and fresh chopped scallion.
If you want more protein, you can add pork sung, beef floss, or preserved egg,
Thank you so much, @isabelap23 for giving me precious feedbacks.
Great notes Irene! Keep up with your texts! Good luck cooking porridge, my country still in lockdown too so now I call the grocery delivery intead of attending there!
oh ... I hope you and the entire family are safe and sound.
